Dinner runs nightly from 6pm to 1am with lunch on Friday, Saturday and Sunday from noon to 3pm. Nobu by the Beach, the separate beach club at Atlantis The Royal's pool, runs daily with the pool open from 9am to 7pm and the restaurant from noon to 9:30pm; the pool is for guests aged 21 and over.

Nobu Dubai is at Atlantis, The Palm, where it has moved into The Bridge Suite, once one of the hotel's signature suites. Nobu by the Beach is a separate, more casual venue at the neighbouring Atlantis The Royal. Give the driver the right hotel; the two are easily confused.
Ordering the way the kitchen intends
The kitchen suggests that first-time guests choose three or more of its Eight Highlights. Start with two or three cold dishes, move on to two or three hot ones, and finish with sushi and dessert. Everything is shared across the table. Ordering in rounds, cold then hot, also keeps the pace of a long dinner comfortable.

Who it suits
The shared format works well for a group of six or eight, where the table can try much of the menu. For a business dinner, a smaller table early in the evening keeps the conversation audible. The restaurant also takes private events for a closed party.
