Il Ristorante – Niko Romito is the Italian chef's restaurant inside the Bulgari Resort on Jumeirah Bay Island, the seahorse-shaped island off the Jumeirah coast that is the quiet-money address in Dubai. Romito holds three stars at Reale in Abruzzo; the Dubai room holds two in the Michelin Guide, with cooking that is contemporary Italian at its most pared back — few ingredients, exact technique, nothing on the plate for show.

Dinner runs from 7pm with the last seating at 10:30pm. There is no minimum spend and no lounge format; this is the resort's dining room, and the Bulgari's guests hold first call on the tables.
