Le Plongeoir is one of the hardest reservations in Nice for one reason: the room is tiny and the view is famous. There are only so many tables on a platform in the sea, and demand does not scale.
Sunset dinner in July and August needs three to four weeks. Lunch is easier. Shoulder season — May, June, September — is both easier to book and, on a clear day, better, because the light matters more here than at any other table on this coast.
Ask specifically for a table on the platform rather than the terrace behind it. Both are confirmed bookings; only one is the reason you came.
