Principote runs a Greek-Mediterranean kitchen — grilled fish by weight, mezze to share, salads built for the heat — and the wine list carries both Greek labels and the French names the island expects.

On price, the useful frame is the minimum rather than a per-dish figure: a table in season carries a €1,800 guide, and a lunch for four with wine sits comfortably inside it. Fish by weight is the line that moves a bill fastest, so ask the price per kilo when you order.

Principote's kitchen: the oven, the sushi bar and the cellar

Principote's restaurant bakes its bread in a wood-burning oven, and the pastry section makes its own pâte à choux. Fish, vegetables and meat come from small local and regional producers, with an emphasis on organic.

The sushi bar

A separate sushi bar applies Japanese technique to Aegean fish. It is a sensible order for a lighter lunch in the heat. It also suits the part of the table that does not want grilled fish by weight.

The wine list

The list is built by the house sommeliers and includes kosher and vegan wines, which matters for guests who keep kosher. Ask the sommelier to match bottles to the table rather than ordering from the list blind.

Which menu is served where

Not everything is served everywhere. Guests on standard sunbeds order from a lighter beach menu and the sushi list. VIP lounger guests can order the full restaurant menu at the bed. The VIP restaurant area, set apart from the main room, serves the full menu in more privacy.

After the meal
