Verbier eats early and goes late. The resort has a shorter restaurant list than Courchevel and a much stronger night, and in February the two are effectively one booking.
Where the night actually is
The Farm Club at Hôtel Nevaï has been the room in Verbier for decades — open format, late, and a guide of CHF 1,800 minimum on a table. It fills from the first week of February and on the weekends either side of half-term it is placed, not walked into.
Eating before it
Verbier dinner is unfussy by Alpine standards — the resort saves its money for the mountain lunch and the night. Book dinner early and close, because the walk between a late table and the Farm Club in February is not one you want to make twice.

Verbier’s lunches are about position more than kitchens: the terrace, the run home, and getting down before the light goes. We place the table and the guide together so the afternoon actually works.
