Verbier eats early and goes late. The resort has a shorter restaurant list than Courchevel and a much stronger night, and in February the two are effectively one booking.
Where the night actually is
The Farm Club at Hôtel Nevaï has been the room in Verbier for decades — open format, late, and a guide of CHF 1,800 minimum on a table. It fills from the first week of February and on the weekends either side of half-term it is placed, not walked into.
Eating before it
Verbier dinner is unfussy by Alpine standards — the resort saves its money for the mountain lunch and the night. Book dinner early and close, because the walk between a late table and the Farm Club in February is not one you want to make twice.

The mountain lunches people ask for
Verbier's best cooking is at altitude, which is why the resort saves its appetite for lunch. La Marlenaz, a walk or a short ski above Savoleyres, is the classic — a sun terrace with the Combins in front of it and a room that fills on any clear day. Chez Dany, in the trees at Clambin above Médran, is the one you ski down to and leave by sledge after dark if you have booked the evening. Cabane Mont-Fort, a mountain refuge at nearly 2,500 m, is where the strong skiers eat. Le Mouton Noir at Les Ruinettes is where lunch stops being lunch and becomes the afternoon. None of these carries a minimum spend in the way a club does; all of them are held ahead for the clear days, and we book them for the best day of the forecast rather than a date picked at random.
Dinner in the village
Verbier dinner is unfussy by Alpine standards and better for it. The W Verbier at Médran holds the resort's smartest rooms, including Sergi Arola's tapas counter; the chalet hotels around Place Centrale keep good, straightforward tables that do not demand a jacket. What matters in February is position: book dinner close to where the night is going, because the walk between a late table and the Farm Club at midnight is one nobody wants to make twice in ski boots.
Après, and the order of the night
The Verbier night has a shape, and fighting it is a mistake. It starts at Le Rouge on the run home at four, moves to the Farinet on Place Centrale for the après proper, breaks for dinner, and ends at the Farm Club at Experimental Chalet, which opens nightly in winter from 23:00 and runs to 04:00 on a CHF 1,800 table guide. The Farm Club has been the room since 1971 and does not need to try; the door is smart casual and the table, in February, is placed rather than walked into.
Booking in February
The first week of February and the weekends either side of half-term are the pinch. In that window we hold the Farm Club table first, because it is the hardest; then the mountain lunches for the clear days; then dinner around them. Guides move with the week — a Saturday in half-term is not a Tuesday in March — and we confirm the exact terms in writing before anything is held.
